Crunchy Kale Chips

Kale chips!!! I know, these don’t sound or look particularly good, but trust me they are!

This is such a great snack to make that is filled with antioxidants, iron and protein as well as many vitamins/minerals. I make these when we are having people over, to dip in guacamole and add them as a side to meals! They are also good on top of tacos to add a nice crunch. These have been tested by my husband, parents, friends, a few picky eaters and they all approved!!

What you’ll need:

  • One bunch or bag of kale
  • Extra virgin olive oil
  • Salt
  • Pepper
  • Garlic powder
  • Cayenne pepper
  • Nutritional yeast
  • * If you haven’t tried nutritional yeast before it is a great spice to have in your kitchen! Many vegans use this as a substitute for cheese and it is loaded with iron, protein, amino acids and vitamins. If you haven’t tried it I highly recommend it!

Directions:

-Preheat oven to 400 degrees F

-Chop kale and spread out evenly on a non-stick baking sheet

-Lightly drizzle the kale with olive oil

-Season evenly with salt, pepper & garlic powder

-Spread the nutritional yeast out over the entire pan (be liberal with it!)

-Add a dash of cayenne pepper

-Mix together with a spatula in the pan and make sure the kale is evenly coated

-Put in the oven and bake about 10 minutes or until desired crispiness

-Serve warm
